  Red Spinach is a green leafy vegetable from the family Amaranthaceae. These leaves are best source of vitamin A and C, and Iron. Moreover it consists of many essential minerals with very low calories. It is rich in fiber and hence helps in Digestion. It is helpful in preventing and managing colon cancer, diabetes and cholesterol. It is a choice for weight loss too. The Genus of Spinach is Spinacia. Spinach is a great vegetable for burning belly fat. Take a bunch of red spinach, wash under running water, remove roots, chop well. In a mixi jar, take 5 tablespoon of grated coconut , one pinch of turmeric powder,quarter teaspoon cumin seeds , 3 garlic , 3 green chilies, crush well without adding water. Add chopped half big onion to the red spinach. Switch on the flame and keep a vessel. Add 2 tablespoon coconut oil , when it heat up, add quarter teaspoon mustard seeds. Drum stick tree is considered as 'super plant' in our system as per ayurveda due to its unique and powerful properties. Drumstick Leaves are rich source of Iron. It regulates blood pressure and control cholesterol. It boosts immunity and purify blood.Drumstick Leaves are rich in anti oxidents. It has many significant vitamins and minerals. The leaves of drumsticks are seven times more vitamin C than oranges and fifteen times more potassium than that in banana's. Moreover it consists of protein, amino acids and calcium which is very much essential to develop body muscles.  In an earthen pot , pour 3 litres of water , make it hot. Take one glass of rice, and three fourth glass of green gram, half tablespoon of fenugreek. The rice cooks easily along with green gram, that's why putting altogether. If rice won't cook easily, then half cook rice first and then add green gram. Wash well for three grams and put it in the hot water of the earthen pot. Cover and bring to boil

  Whenever I see these chalk pieces, I remember my childhood. Those beautiful days I spend in my school. Teachers came with one or two pieces of chalk pieces in their hand. The leftover chalk pieces kept in a box, where dusters also placed. Sometimes the chalk pieces get over and teachers send leaders to take chalk pieces from the staff room. Most of the times the chalk pieces have to be dusted and pick from wood powder. Everything I learned from those blackboards, where the lessons were written with chalk.  Take 2 banana's , a piece of snake gourd, half piece brinjal,12 cluster beans,a piece of pumpkin , elephant yam , bottle gourd , cucumber , 6 green chilies and 3 stick curry leaves. Chop vegetables lengthwise. You can add drumstick if its seasonal. We can use all vegetables for aviyal except ladies finger. Using raw Kerala banana gives special taste to the dish. Transfer the vegetables to an earthen pot. In a mixi jar , take 3 green chilies, 5 garlic, quarter teaspoon turmeric powder,quarter teaspoon cumin seeds , 5 tablespoon grated coconut . Add water and crush it. Then add 2 sticks of curry leaves and crush again. Add the prepared paste to  the vegetables . Add salt , half glass of water , mix well. Switch on the flame and cook on high flame initially. When it boils, mix well , reduce flame , cover and cook again. When it is about to ready, season it.   Take 2 fistful of green gram,soak for 4 hours. Take one banana flower , remove first 2 to 3 layers.Chop it finely. Washed soaked green gram twice and put into earthen pot . Cook on high flame initially. Reduce the flame when green gram boils. When green gram cooked well , add half tablespoon salt, mix well. Add chopped banana flower , stir well, cover and cook on low flame . To a mixi jar , add 5 tablespoon of grated coconut , 5 garlic , a pinch of turmeric powder ,half tablespoon red chili powder , crush well. Then add 2 sticks of curry leaves , crush again. Add the mix to banana flower, stir well. Cover and cook for 2 minutes and switch off the flame. Keep a pan and add 2 tablespoon of coconut oil, when it gets hot , add half teaspoon mustard seeds. When it splutters, add a stick of curry leaves. Transfer banana flower to the seasoning , stir well , switch off the flame.   Take medium size ginger, 5 pieces of garlic , small piece cinnamon,4cloves and 3 cardamoms first. And then crush cardamoms . Then only cardamoms crush properly. The quantity of ginger should be more than garlic . Keep a pan on flame and add 3 glasses of water. When it heats up, add quarter teaspoon of tea powder , a pinch of turmeric powder , little pepper powder as per the spice level. Stir well. Then add crushed  cardamom , ginger, garlic ,cinnamon and cloves . Bring to boil. Keep on low flame. Allow to boil for one minute. Mean while add 3 tablespoon of sugar. Switch off the flame . Curd consists of stomach friendly bacteria helps to soothes the inflamed digestive system. It is a perfect dish for maintaining body weight. As curd is a rich source of calcium, it maintains BMI (Body Mass Index). Curd is an excellent fat Burner, thus it enhances weig ht loss.  Take 15 shallots, 2 green chilies, 2 big size ginger, chop into very small pieces. Add half teaspoon salt and smash well with fingers,so that the juice comes out from shallots, ginger and chilies. Allow to rest for 10 minutes. After 10 minutes add 150 ml thick curd and mix well. It contain all essential amino acids required by the body for the maintenance of lean muscle tissue of the body. Tuna is a good source of omega - 3 fatty acids which is important for heart health. Take a medium size tuna fish which costs around 250/- Indian Rupees as of February 2021 in Kerala. Take its head, bones , small pieces of tail portion of tune fish.   Oats is a whole grain food. It's scientific name is Avena Sativa.The highly processed oats are known as quick or instant oats. Others takes longer period to cook. Oats contain high fiber, so it's great for digestion. Oats helps in relieving constipation. One cup of oats consists of 4 grams of fiber. And hence this is an ideal dish for breakfast. Even can include fruits or nuts for increasing fiber value for breakfast. But excess intake of oats results in bloating. To reduce side effects start with less amount initially and then slowly increase the quantity till reaching the desired amount. The body will take some time to adjust with the oats bran. Take one and half glass of water. When water gets hot, add 2 tablespoon of oats. Stir well, bring to boil. When oats is cooked well, add one tablespoon of sugar. Stir well.   The Horse Mackerel is also known as Indian scad which is a species of Jack Mackerel from the family Carangidae. Genus :Trachurus Kingdom:Animalia Order :Carangiformes Here is an 500 grams of Horse Mackerel, which brought for Indian Rupees 100 /- as of February 2021.It is a tasty salt water fish, which is fried in limited oil. The oil used here is coconut oil which gives special taste and flavor of the dish. Take 500 grams of Horse Mackerel, wash and drain well. In a mixi jar , add one and half tablespoon of dry red chili powder, quarter teaspoon turmeric powder , one tablespoon salt , 10 shallots and 25 garlic. Crush well , add some water and half tablespoon pepper powder, grind and make fine paste. Marinate fish pieces and allow to rest for half an hour. Keep a pan and switch on the flame.   Take one and half glass of broken wheat , soak for 2 hours. Wash well for 3 times . Squeeze and drain entire water from the broken wheat. Add quarter teaspoon of salt and mix well. Take the funnel and wash it . Insert the steam plate into it. Put some freshly grated coconut to it. Then two fistful of broken wheat. Again put freshly grated coconut , then broken wheat. Repeat the same till the funnel fill up. Keep a cooker o flame and add one glass water. Keep on high flame. When steam comes out , keep the funnel in the whistle. Cook until the steam comes out through the upper part of the funnel. Then keep on low flame , and cook for 2 more minutes. After 2 minutes , switch off the flame and take out the funnel cake from it. Papad stir fry is one of the best combinations. Serve hot. Enjoy with the grated coconut.
