Take 2 banana's , a piece of snake gourd, half piece brinjal,12 cluster beans,a piece of pumpkin , elephant yam , bottle gourd , cucumber , 6 green chilies and 3 stick curry leaves.
Chop vegetables lengthwise.
You can add drumstick if its seasonal.
We can use all vegetables for aviyal except ladies finger.
Using raw Kerala banana gives special taste to the dish.
Transfer the vegetables to an earthen pot.
In a mixi jar , take 3 green chilies, 5 garlic, quarter teaspoon turmeric powder,quarter teaspoon cumin seeds , 5 tablespoon grated coconut .
Add water and crush it.
Then add 2 sticks of curry leaves and crush again.
Add the prepared paste to the vegetables .
Add salt , half glass of water , mix well.
Switch on the flame and cook on high flame initially.
When it boils, mix well , reduce flame , cover and cook again.
When it is about to ready, season it.
For that keep a vessel and add 2 tablespoon coconut oil.
When oil gets hot , add quarter teaspoon mustard seeds .
When mustard seeds splutters add 2 sticks of curry leaves , pour into the aviyal, mix well.
When the seasoning like this helps to spread coconut oil all over and easy to mix .
Moreover it will not break vegetables.
When vegetables cooked well, and reduce water in it, switch off the flame.
Serve with Hot rice.

Snake Gourd - One Piece
Brinjal - Half Piece
Cluster Beans - 12 Nos

Green Chilies- 9 Nos
Curry Leaves - 3 Sticks
Grated Coconut - 5 Tablespoon
Turmeric Powder- Quarter Teaspoon
Cumin Seeds - Quarter Teaspoon
Coconut Oil - 2 Tablespoon
Mustard Seeds - Quarter Teaspoon
Salt - As Per Taste
Water - As Required
