 Chutney or chammanthi's is a condiment / sauce in the Indian cuisine .Here is a chutney which is made with drumstick leaves .Drumstick leaves have seven times more vitamin C when compare with oranges and fifteen times potassium than that of banana's.These leaves are richest source of calcium, protein , iron and amino acids .Moreover these green leaves are rich in antioxidants which helps to protect cells from damage and elevate the body's immune system.Drumstick leaves or moringa taken by mouth helps to overcome anaemia,arthritis,ulcer, headache and stomach pain. Method Of Preparation Take ten tablespoon of freshly grated coconut, six bird's eye chilies and six shallots. Transfer to a mixi jar, add quarter glass water and grind it. Don't over grind the chutney. Switch on the flame and keep a pan. Add one teaspoon of coconut oil. When oil gets heat up , add quarter teaspoon mustard seeds.  Moon fish is also known as Opahs which has a small family Lampriade.There are two genera of family for the moon fish .They are Lampris and the monotypic Megalampris.These fishes are considered to have near whole body endothermy in which the entire body is maintained at around 5 degree and above of the surrounding water.This is unique fish as most fish are entirely cold blooded in nature or capable of warming only some of their bodies .  Black Leather Jacket fish is a delicious fish which is available in selected coastal regions in India.Especially when comes to southern regions of India, it is seen in Tuticorin coast and is little bit expensive due to its great taste and limited availability. The outer part of the fish is black in color where as the flesh inside is super soft and white in color . Cleaning Fish To clean the fish remove its dorsal fins first. Then remove pectoral fins . Remove head including its gills. Peel the outer skin layer of both sides from the head part. Remove intestines and tail too. No need to use knife to cut the fish as it is super soft. It has soft middle bone . The outer skin is black where as the flesh is white.  Cardamom is one of the most valued spices with a beautiful history dating back thousands and thousands of years.Cardamom usually has a special method of cultivation , processing technique .It has a beautiful texture with charming aroma which attracts all of us.Most of the cardamom cultivation and processing takes place in western ghats of Kerala, Tamil Nadu and Karnataka in India.Cardamom is used in both sweet and savory dishes.Its eloquence , culinary magic and healing powers have earned it the title as the " Queen Of Spices ". Here is a special yummy recipe of making a chammanthi or chutney with elakka or cardamom. Method Of Preparation Take four tablespoons of freshly grated coconut, one green chili , two shallots , five tender cardamoms , little tamarind and salt. Put altogether in a mixi jar and crush gently with out adding water. Then add a small piece of ginger and grind well. Always use tender cardamoms for making the chutney .  Make sure the chammanthi is grind well
