Mathi Pollichathu || Sardine Fish In Banana Leaf || With Less Oil ||Ep No : 130

Sardine is small oily forage fish belongs to herring family Clupeidae. Sardine fish is good for health.Sardine provide 2 grams of omega - 3 per 3 ounce serving which is heart healthy fatty acid.Sardines are considered as the richest source f omega - 3 - fatty acid and lowest levels of mercury in any forms of fish.Moreover these fishes contains abundant source of calcium and vitamin D .So that these helps for bone health.Sardine is a marine fish.They are small , silvery elongated fishes with single short dorsal fin without any lateral line and no scales on head.They are about 15 to 30 cm in length.Sardines are commercially used as fresh fish, for drying , salting , smoking and for reduction into fish oil.Sardines are available as canned fish too.


Method Of Preparation

Take one bulb full of peeled garlic , twenty onions , two big pieces of ginger and a fistful of fresh tender peppercorns.
Add altogether in a mixi jar along with salt , quarter teaspoon of turmeric powder and a stick of fresh curry leaves.
Grind altogether without adding water.
Take ten fresh sardine fish , clean and make small cuts over the fish.
Marinate well all fish pieces and allow to rest for minimum ten minutes.
Switch on the flame and show banana leaf on flame to make it soft , then make into small pieces.
Keep one banana leaf on a plate and add one teaspoon of coconut oil , spread even on the leaf.
Spread some grinded mix over the oil and then keep marinated fish.
Keep some of the marinated mix or the left over mix over to the fish .
Add one tablespoon of coconut oil and cover with banana leaf.
Switch on the flame and keep an earthen pot, add one tablespoon of coconut oil, spread well.
When pot gets hot , keep two banana leaves and then keep fish over to that.
Again keep two banana leaves above to the fish.
Cover with a lid .
Keep on high flame initially.
Once it gets hot, reduce the flame.
Flip after five minutes and repeat for 7 to 8 times.
It takes minimum 45 minutes to cook on low flame.
When it is half done and start changes its color, add two teaspoon of natural home made palm vinegar.
Cover and cook again.
Cook well until it turns dry and gets slightly burned color.
Serve with hot rice or tapioca.



Ingredients 

Sardine Fish - Ten Nos
Garlic - One Bulb Full
Shallots - Twenty Nos
Tender Peppercorns - One Fistful
Ginger - Two Pieces
Curry Leaves - One Stick
Turmeric Powder - Quarter Teaspoon
Banana Leaf - One or two leaves , depends on the size
Vinegar - Two Teaspoon
Coconut Oil - Three Tablespoon
