Elakka chammanthi || Cardamom / Elaichi Chutney || Ep No :131

 Cardamom is one of the most valued spices with a beautiful history dating back thousands and thousands of years.Cardamom usually has a special method of cultivation , processing technique .It has a beautiful texture with charming aroma which attracts all of us.Most of the cardamom cultivation and processing takes place in western ghats of Kerala, Tamil Nadu and Karnataka in India.Cardamom is used in both sweet and savory dishes.Its eloquence , culinary magic and healing powers have earned it the title as the " Queen Of Spices ".



Here is a special yummy recipe of making a chammanthi or chutney with elakka or cardamom.

Method Of Preparation

Take four tablespoons of freshly grated coconut, one green chili , two shallots , five tender cardamoms , little tamarind and salt.

Put altogether in a mixi jar and crush gently with out adding water.

Then add a small piece of ginger and grind well.

Always use tender cardamoms for making the chutney . 

Make sure the chammanthi is grind well enough .

Use green color seeded cardamoms for making the recipe , other wise it has fiber in the chutney as the outer layer of the cardamoms wont grind properly and hence it alters the taste too.

Check salt and spice level and transfer to a plate .

Serve with hot porridge, rice or biriyani.



Ingredients 

Freshly Grated Coconut - Four Tablespoons 

Green Chili - One Nos

Shallots - Two Nos

Tender Cardamoms - Five Nos 

Tamarind - One Small Ball Size

Ginger - One Small Piece

Salt - As Per Taste
