 Black Leather Jacket fish is a delicious fish which is available in selected coastal regions in India.Especially when comes to southern regions of India, it is seen in Tuticorin coast and is little bit expensive due to its great taste and limited availability. The outer part of the fish is black in color where as the flesh inside is super soft and white in color .



Cleaning Fish

To clean the fish remove its dorsal fins first.

Then remove pectoral fins .

Remove head including its gills.

Peel the outer skin layer of both sides from the head part.

Remove intestines and tail too.

No need to use knife to cut the fish as it is super soft.

It has soft middle bone .

The outer skin is black where as the flesh is white.

Wash well under running water for three to four times and drain well. 

Cost Of Fish :

The cost of one kilograms of Adu / Black Leather Fish is Indian Rupees 160/- as of October 2021. 

Method Of Preparation :

Take one kilograms of black leather jacket fish.

Take 6 garlic , a small piece ginger , 30 peppercorns , quarter teaspoon turmeric powder , one teaspoon red chili powder , one teaspoon kashmiri chili powder and salt.

Put altogether in mixi jar and crush well without adding water.

Marinate the fish with this mix and allow to rest for minimum half an hour.

Switch on the flame and keep a pan.

Add coconut oil.

When it gets hot add curry leaves with its sticks.

Then keep the fishes to fry.

When one side is fried well , flip on the other side .Flip two to three times eah side and fry till brown color.

When fish fried well, switch off the flame and slightly turn and keep the pan to one side , so that the extra oil flow to one side of the pan.

Serve with rice or tapioca.



Ingredients 

Black Leather Jacket Fish - One Kilograms

Garlic - 6 Nos

Ginger - One Small Piece

Peppercorns - 30 Nos

Turmeric Powder - Quarter Teaspoon

Red Chili Powder - One Teaspoon

Kashmiri Chili Powder - One Teaspoon

Coconut Oil -5 Tablespoon ( Required  For Frying )

Fresh Curry Leaves - 4 Sticks

Salt - As Per Taste
