Pork Curry ||Ep No :201
Pork is a source of zinc, selenium and vitamins B12 and B6.These help the immune system to work normally .This is the richest source of Niacin and Riboflavin - B vitamins that help to reduce tiredness and fatigue as part of a healthy balanced diet and lifestyle.Pork is the culinary name of the meat of the pig .It is most commonly consumed meat worldwide .Pork is eaten both freshly cooked and preserved.Ham , gammon, bacon and pork sausage are preserved pork.It is the most popular meat in the western world, particularly in Central Europe.
Ingredients
Pork - 3kg
Coconut oil- Six tablespoon
Curry leaves- One fistful
Big onion- Four Nos
Garlic - Four bulbs
Ginger - One medium size
Kashmiri chili powder- Three tablespoon
Red chili powder- Two tablespoon
Coriander powder- Three tablespoon
Turmeric powder- One teaspoon
Garam masala- One tablespoon, home made, freshly prepared/ grinded
Salt - As per taste
Water- As required
Method of preparation
Keep a heavy bottom vessel on firewood.
Add six tablespoon of coconut oil.
When coconut oil heats up, add two sticks of fresh curry leaves.
Now add four chopped big onions, sauté well.
Add chopped four garlic bulbs and a medium size ginger to it, saute well.
Then add three tablespoon of Kashmiri chili powder , two tablespoon of red chili powder, three tablespoon of coriander powder and one tablespoon of home made garam masala .
Add quarter glass water and stir well.
Three fourth of the sauted mix take out from the vessel and transfer to another plate.
Then to the remaining spice mix , add three kg pork meat .Stir well.
Add quarter glass of water and cook well for one hour.
Add two sticks of fresh curry leaves .Add salt in between.
Once meat cooked well, remove the floating fat to another vessel.
Add the prepared spice mix, stir well.
Add two sticks fresh curry leaves and take out from flame.
Serve hot with rice, appam,chapathi, bread and kappa/tapioca.
