White sardine fish fry is one of the easy and quick recipe which is crispy and super tasty.This white sardine or veloori fish fry is a mouth watering dish which is best combination with hot rice, preferably Kerala matta rice or it can be served as as starter too.White sardines are heart friendly fish as it is rich in Omega 3 fatty acid which helps to lower cholesterol level.White sardine fish fry is prepared by marinating fish  with certain Indian spices.It can be either shallow fried or deep fried in hot oil.The coconut oil which is using for frying the fish will provide an amazing flavor and aroma to the dish.The bone of white sardine is soft, so that it is easy to chew.Fry sardines until both sides are evenly brown and crispy.



Ingredients

White sardines - 500 grams
Turmeric powder- Quarter teaspoon
Dry red chili powder - One teaspoon 
Kashmiri chili powdder - One and half teaspoon
Pepper powder - One teaspoon
Fenugreek powder - 2 pinch
Shallots - 2 Nos
Garlic - 2 Nos
Ginger - 3 Small pieces
Coconut oil - Half cup
Curry leaves - 3 Sticks
Half Lemon - Juice of half lemon
Onion - 1 Nos
Green chilies - 10 Nos
Salt As per taste
Water - 2 to 3 teaspoon



Method of preparation

Take 500 grams of white sardine fish , clean , wash and drain well
Take quarter teaspoon turmeric powder, one teaspoon dry red chili powder,one and half teaspoon kashmiri chili powder,one tespoon pepper powder, two pinch fenugreek powder, 2 shallots, 2 garlic , a small piece of ginger, 2 petals of fresh curry leaves, a teaspoon fresh coconut oil and half teaspoon salt
Grind altogether by adding water and make a thick paste
Squeeze juice of half lemon o the white sardine
Marinate fish with the prepared paste
The masala should coat properly to the fish
Allow the marinated fish to rest for minimum half an hour
Take one small onion, 2 pieces of ginger, 10 green chilies and a stick of fresh curry leaves
Chop onion and make onion rings, cut ginger thinly and slit green chilies
Keep a pan and add required amount of coconut oil for frying fish
To the heated oil add marinated fish and fry well
Keep it on a low to medium flame and fry fish
Flip fish when one side is ready and ten add a teaspoon chopped ginger
When fish is about to fry , add a stick of fresh curry leaves
Flip fish in between while frying to fry well on both sides
When both sides are fried well , transfer fish to a plate
Clear oil before adding the next batch fish for frying by removing the small particles in the oil left after frying fish
Add remaining fish pieces and fry on the same way
Add coconut oil in between if oil is needed for frying
You can either deep fry or shallow fry white sardine as per your choice
You can make fish fry more crispy or soft and tender as your wish
Clear oil after frying fish by removing small particles
Add 2 teaspoon coconut oil to the pan and add onion rings to oil
Add required salt to the onion and fry until it changes its color
When its changes to golden brown, remove from pan and transfer to a plate
Then add sliced green chilies , fry until it's become soft
Add some fresh curry leaves and fry well along with green chilies and transfer to a plate
When its ready switch off the flame.

Serve fish fry topping with fried onion, green chilies and curry leaves.

Tasty fish fry is ready to serve.
Best combination is hot rice ( preferably Kerala matta rice )
