Chinese potato is low in calories and has a wealth of nutrition such as dietary fibre, vitamin C,B6 and minerals like potassium , manganese and iron.It also contains anti oxidants , which protect the body against oxidative stress and inflammation.
Ingredients
Chinese potato- One kg
Coconut- 10 tablespoon, freshly grated
Shallots- One Nos
Coriander powder- Half teaspoon
Turmeric powder- Quarter teaspoon
Green chilies- Four Nos
Curry leaves- Two sticks
Coconut oil- Three tablespoon
Mustard seeds- Quarter teaspoon
Salt- As per taste
Water- As required
Method of preparation
Take one kg Chinese potato, wash and remove its outer skin.
Chop into small pieces.
To a mixi jar, add 10 tablespoon of coconut, add one shallot, half teaspoon of coriander powder, and quarter teaspoon of turmeric powder , crush well.
Add a teaspoon of salt to the Chinese potato , mix well.
Add crushed coconut mix to it, add half glass water and four green chilies and cook them well.
Once Chinese potato softens and water dried well, add a stick of fresh curry leaves and switch off the flame.
Into a pan , add three tablespoon of coconut oil .
When coconut oil heats up, add quarter teaspoon of mustard seeds.
Once mustard seeds pop up, add a stick of fresh curry leaves .
Now add cooked Chinese potato , stir well.
Serve hot with rice and porridge.
