Kathirikka Masala|| Brinjal Masala ||Ep no:182

Brinjal or egg plants is cultivated world wide and is an edible fruit.These are mostly purple, spongy , absorbent fruit and is used as a common vegetable across the world in different cuisines.These are power packed fruit that contains a wealth of nutrients including vitamins, minerals, and fibre .There are several varieties of brinjals that vary in size and colour .These are nutrient dense food that is low in calories and packed with a store house of bioactive compounds that support the proper functioning of body process.

 Ingredients

Brinjal-One Nos, Large medium size
Coconut oil- Five tablespoon
Mustard seeds- Quarter teaspoon
Savala- One medium size
Tomato-One medium size
Ginger garlic paste - One tablespoon
Green chilies- Two Nos
Turmeric powder- Quarter teaspoon
Kashmiri chili powder- One teaspoon
Red Chili powder- Quarter teaspoon
Garam masala - One teaspoon, home made
Kasoori mehthi/  Dry Fenugreek leaves- One tablespoon
Salt - As per taste
Water- As required


Method of preparation

Take one medium size brinjal, cut into small pieces, put it into water to avoid discolouration.
Switch on the flame and keep an earthen pot.
Add five tablespoon of coconut oil .
Add quarter teaspoon of mustard seeds.
Once mustard seeds pop up, add one chopped savala/big onion, sauté well.
Add quarter teaspoon of salt and mix well.
Now add one chopped tomato, stir well.
Add one teaspoon ginger garlic paste and two green chilies , mix well.
Cover and cook tomatoes well.
Now add quarter teaspoon turmeric powder, one teaspoon Kashmiri chili powder , half teaspoon red chili powder , and one teaspoon home made garam masala, stir well.
Now add chopped brinjal, mix well to the masala.
Add quarter glass of water and cook brinjal until it turns soft.
At last , add one teaspoon of kasoori mehthi/dried fenugreek leaves and switch off the flame.
Serve with hot rice and yummy moru kachiyathu.
Finally, add some hot rice to the earthen pot , mix rice to the left over masala in the pot .
Try this , it gives a special amazing flavours to the tongue.
