Chembu Ularthiyathu ||Colacasia Stir Fry ||Ep No :194

Colacasia is a genus of flowering plants in the family Araceae, native to southeastern Asia and the Indian subcontinent.Some species are widely cultivated and naturalized in other tropical and subtropical regions.It aids in digestive health.The dietary fiber present in the colacasia plant helps to promote a healthy digestive system.By regularizing bowel movements , it can prevent mild to severe constipation.Cures heart health as it is low in cholesterol and thus it makes it a heart health vegetable.



 Ingredients

Chembu/Colacasia- Five Nos
Coconut- Five tablespoon, freshly grated
Coconut oil- Three tablespoon
Mustard seeds- Quarter teaspoon
Shallots - Three Nos
Red dry chili - Three Nos
Curry leaves- One stick
Salt - As per taste
Water- As required


Method of preparation
Take five medium size colacasia , remove outer skin and wash them.
Chop into small pieces.
Transfer to an earthen pot.
Take five tablespoon of freshly grated coconut, add salt and quarter glass water, smash well.
The coconut milk comes out of it.
Then transfer the grated coconut with coconut milk to the chopped colacasia.
Add quarter glass water and cook colacasia well. stir in between.
Once water dried and colacasia cooked well , switch off the flame.
Keep a seasoning pan, add three tablespoon of coconut oil.
Once oil gets heats up, add quarter teaspoon of mustard seeds.
When mustard seeds pop up, add three chopped shallots.
Fry shallots till golden brown.
Then add three chopped dry red chilies and a stick of fresh curry leaves.
Switch off the flame and transfer the seasoning to the cooked colacasia, stir well.
Serve hot.It is best with hot rice and porridge too.
