Jackfruit is mostly known as Jack tree, which belongs to the species of mulberry and breadfruit family. It's origin is in rainforests of Malasiya and western Ghats of South India.

Jackfruit is the Kerala's official fruit. Which is the largest tree borne fruit known for it's distinct taste and aroma. The state Government of Kerala made an official announcement in this regard on 2018March 21,based on a proposal of the Agricultural department. The announcement made by Agricultural Minister, VS Sunil Kumar in the State Assembly in the same day.

Moreover, the Kerala Government also have plans to promote the 'Kerala Jack fruit' as a brand in markets across the county and abroad, highlighting it's organic and nutritious qualities.

Method Of Preparation

Take one young tender jack fruit , cut into small pieces .
Wipe off the wax in between with a paper or tissue paper.
Remove its outer thick layer part and then chop into medium size pieces.
Add quarter teaspoon of turmeric powder and half teaspoon of salt, mix well.
Add a glass of water and pressure cook for a whistle.
Take a tablespoon of grated coconut , 8 garlic, ten bird's eye chilies , two sticks of fresh curry leaves , quarter teaspoon of turmeric powder and five shallots, grind well.
Once pressure is released , open pressure cooker and transfer the contents to  a plate.
Crush them with a mortar.
Switch on the flame and add four tablespoon of coconut oil.
Add quarter teaspoon of mustard seeds when oil gets hot.
Add five sliced shallots too.
Then add three sticks of fresh curry leaves.
Add grinded mix and stir well.
Now add crushed young jackfruit and mix well.
Add remaining water in the cooker too.
Cover and cook well.
Stir in between.
Add salt if required.
Add a pinch of pepper powder and two tablespoon of fresh coconut oil, stir well.
Make the fry dry and switch off the flame.
Serve with hot rice.

Young tender jack fruit- One Nos
Turmeric Powder - Halt Teaspoon
Grated coconut - Ten tablespoon
Garlic - Eight Pieces
Bird,s Eye Chilies - Ten Nos
Curry leaves - One hand full
Shallots - Ten Nos
Coconut Oil - Six Tablespoon
Mustard Seeds - Quarter Teaspoon
Pepper Powder - One Pinch
Salt - As required
Water- As required
