Kerala style chicken dishes are usually packed with spices , rich in taste and flavors .It has a soul - soothing texture .Kerala offers a list of delicious and yummy side dishes with main course that certainly many of the outsiders can never get enough of.Despite of being popular for the many varieties of chicken dishes , many tourists take a tour of food to enjoy the traditional taste.From the famous chicken biriyani the taste of every chicken dishes is simply exquisite.It is a true fact that Kerala stands out in all the flavors in chicken recipes.Those who are chicken fan, must try the Kerala style chicken roast .
Method Of Preparation
Take one kilograms of chicken, add half teaspoon turmeric powder and half tablespoon salt,one tablespoon of curd, mix well and rest for forty five minutes.
Switch on the flame and keep a pan , add five tablespoon of coconut oil.
When oil gets hot, add two medium size onion and fry till golden brown with out adding salt, keep aside.
To the oil , add three cloves, three cardamoms, one small size cinnamon, one star anise and one tablespoon of fennel seeds , roast till aroma releases.
Add one chopped medium size ginger and two bulb garlic , saute well.
Add six sticks of fresh curry leaves , two green chilies and two chopped onions.
Add salt and stir till the color changes in the onion.
Now add quarter teaspoon of turmeric powder,two tablespoon of red chili powder , three tablespoon of chicken masala and two tablespoon of coriander powder.
Add one or two tablespoon of coconut oil, if required and saute till raw taste of the powder goes off.
Now add one chopped tomato and stir well.
Cover and cook till tomato cooks with onion.
Check salt and add if required.
Add marinated chicken and mix well.
Cover and cook chicken until soft.
Take a wide pot and transfer the cooked chicken pieces to it.
So that it is easy to roast them.
Do not cover the chicken while cooking here after.
Stir and roast chicken.
Usually it takes ten to fifteen minutes to roast well.
Stir continuously and keep on low flame while roasting.
Add two tablespoon curd with out lumps to the chicken, and mix well.
Add fried onion and stir well.
Add three sticks of fresh curry leaves , mix them.
Finally add a chopped green chili and stir well.
Serve with chapathi, rice , bread , puttu and so on.

Fennel Seeds - One Tablespoon
Ginger - One Medium Size Piece
Garlic - Two Bulbs
Curry Leaves - Eight Sicks
Green Chilies - Three Nos
Chili Powder - Two Tablespoon
Chicken Masala- Three Tablespoon
Coriander Powder - Two Tablespoon
Tomato - One Nos
Salt - As Per Taste
