 Sword bean or Canavalia Gladiata or Scimitar Bean is belongs to legume family Fabaceae.Mostly this vegetable is not commercially farmed.So that it is not readily available in the market.

Sword beans tastes sweet.It is one of the key ingredients in the chineese medicine as sword beans tend to slow down acute reactions and detoxify the body.

Even though sword beans are not farmed commercially, we can grow them in our own garden bed easily.It gets its name as the bean pods are sword like shape.Sword bean pods can grow to a little over a foot long and one to two inches wide.These long green pods contain large , red seeds that can range in color from pink, white to brown

They enhances the functioning of central nervous system.Sword beans has an anti - parkinsonian effects.

The extract of sword beans are effective against alveolar bone resorption.

Moreover they have Hepato protective activity in human body.

Sword beans has an amazing anti cancer effect.

It aids in bone metabolism.  

Method Of Preparation 

Take three medium size sword beans.

Cut its both sides , slit into two pieces.

Remove the inner thick white layer with knife, wash well.

Chop in the chopper , or can chop with knife as very thin .

Chop one small onion , three green chilies, and three garlic.

Take three tablespoon of coconut in a mixi jar, add a pinch of turmeric powder,quarter teaspoon of cumin seeds , chopped three green chilies and three garlic .

Crush them, but don't over grind the mix.

Switch on the flame and keep a pan.

Add one tablespoon of coconut oil,when it gets heat up, add quarter teaspoon of mustard seeds.

once mustard seeds pop up, add a stick of curry leaves and then add chopped sword beans along with onion.

Cover and cook well, stir in between.

When it starts cook well and changes its color , add salt for taste , stir well.

Cover and cook them.

Then add the prepared mix and stir well.

To the mixi jar add two tablespoon of water and then add to  the sword beans.

Cover and cook for another three minutes.

Once it's cooks well and raw taste of coconut mix goes off, switch off the flame.

Serve with hot rice.

Green Chilies - Three Nos

Garlic - Three Nos

Coconut - Three Tablespoon

Turmeric Powder - Quarter Teaspoon

Cumin Seeds - Quarter Teaspoon

Curry Leaves - One Stick

Coconut Oil - One Tablespoon 

Mustard Seeds - Quarter Teaspoon

Water - Two Tablespoon

Salt - As Per Taste
