Bitter Melon / Bitter gourd / Momordica charantia belongs to gourd family.It may tastes bitter but has various health benefits.
Here is why we have to include bitter gourd in our diet.
It is a rich source of vitamins and minerals , as it contains iron , calcium, magnesium and potassium along with vitamins A and C.
Bitter gourd contains several anti oxidants and anti inflammatory compounds. 
It helps in lowering bad cholesterol levels which helps reduce the risk of cardiovascular diseases and cerebrovascular accident or stroke.
This is a vegetable which supports body's immune system and improves respiratory health of a person.
Bitter gourd is known for its anti diabetic properties that help to lower sugar levels of the body.
This is a vegetable which is low in calories, fat and carbohydrates which aid weight management.It also keeps feeling full for longer and helps one avoid over eating and hence it aid in weight loss.
This is an excellent source of dietary fiber ,helps in relieving constipation and indigestion.
As bitter gourd contains anti ageing properties it boosts skin health.

Method Of Preparation

 Here's the recipe of yummy bitter gourd theeyal which is the best combination with hot Kerala matta rice.

Take one long green bitter gourd , wash well.

Cut into two pieces , remove it's seeds and chop very thin.

Take 20 shallots and two garlic pieces.

Chop shallots and garlic.

Keep an earthen pot and add one and half tablespoon of coconut oil.

When oil gets hot, add bitter gourd , shallots and garlic , stir well.

Chop three green chilies and add to it.

Add some curry leaves and stir well on a low flame.

Keep another pan and add four big spoonful of grated coconut.

Add one teaspoon of fenugreek and roast well along with coconut.

When coconut turn dark brown color , switch off the flame.

To the heated pan , add one and half tablespoon red chili powder.,one tablespoon coriander powder and quarter tablespoon turmeric powder.

Stir well until the raw smell goes off.

To a pan add one glass of water and make it hot.

When water heated up, add one gooseberry size of tamarind.

Mix well and soak it for some time.

When bitter gourd sorted well and it starts changing it's color , switch off the flame.

Transfer the roasted coconut and curry powders to a dry mixi jar, grind well.

Add some water and make it as a fine paste.

To the sorted bitter gourd , add some salt and tamarind water , bring to boil.

Add a pinch of salt to the grinded paste and transfer to the bitter gourd.

Wash and add entire paste to the curry from the jar.

Mix well and add a glass of water again to make curry.

Check salt and add if required.

Bring to boil and switch off the flame.

Add some fresh curry leaves and cover with lid.

Tastes best when consume on the next day.



Ingredients :

Bitter Gourd - One Big Size ( White )

Shallots - 20 Nos

Garlic - 2 Nos

Coconut Oil - Half Tablespoon

Green Chilies - 3 Nos

Grated Coconut - 4 Big Spoon

Fenugreek - One Teaspoon

Red Chili Powder - One And Half Tablespoon

Coriander Powder - One Tablespoon

Turmeric Powder - Quarter Tablespoon

Water - 3 Cups

Tamarind - One Gooseberry Size

Curry Leaves - One Fistful

Salt - As Per Taste
