Soft Idli || Kerala Style || Idli Using Raw Rice Powder || Ep No : 112
Here is the recipe of soft and spongy idli prepared with white raw rice flour. This recipe will be helpful for those making idli batter in mixi for more people in the family. Here is an idea where the batter will not become hot while grinding in the mixi. The taste is super good as like what we get it from the restaurants. You can trust the recipe and prepare as this is preparing in my family for years in this way.
Method Of Preparation :
Take half glass and half fistful of urad dhal , wash and soak for 5 hour.
Add a teaspoon of fenugreek and soak along with urad dhal.
After 3 hours of soaking, urad dhal , keep in the refrigerator for cooling.
So that the dough will not get hot while grinding.
Take 4 glasses of raw rice powder.
Prepae rice powder after washing the raw rice , soak , drain and powder it.
The price of white raw rice is Indian Rupees 35/- per kilograms as of September 2020.
After soaking , grind urad dhal and grind well.
After grinding , transfer the urad dhal to the raw rice powder and mix well.
Add water if require to mix altogether.
Batter should not be too thin or thick.
Cover and keep for fermentation for 10 to 12 hours.
The fermentation time may vary according to the climate from place to place.
After 10 hours , the batter has bubbles in it , the dough has raised slightly.
So that it is partially fermented and that is the batter needed for idli.
Add one and half tablespoon of salt and mix well.
In an idli maker, pour some water and make it boil.
Spread gingelly / seaseme oil to the idli plates.
Keep idli plate inside the idli maker and pour batter.
Cover and cook for 10 minutes on high flame.
Switch off the flame after 10 minutes.
The idli will be perfectly cooked and plate can be taken out.
When it cools,slightly, take out idli with spoon or hands.
Serve hot with sambar or chutney.
