Kalan is one of the main dishes in the traditional Kerala Sadya.It is prepared with raw banana's and yougurt.The slightly sourly taste of the dish is the highlight of the dish which is the best combination with Kerala Matta Rice. It is an inevitable dish in the Kerala Sadya.
Method Of Preparation
Take 4 medium size Kerala banana's .
Cut both ends and dip in water , then peel banana's.
The skin of banana can be used for preparing stir fry.
Cut banana lengthwise , and chop into pieces , and put into water.
Wash well under running water.
Take 6 green chilies , slit them and add to the banana's.
Add one tablespoon chili powder , half tablespoon turmeric powder , one tablespoon salt and one glass water,stir well.
Add a stick of curry leaves and cook well.
In a mixi jar , take 6 tablespoon of fresh grated coconut and one teaspoon cumin seeds.
Add quarter teaspoon of salt and water, grind well.
When banana;s cooked well, add prepared coconut mix and stir well.
Take 400 mi thick yogurt , beat well with spoon and make smooth without lumps.
Add yogurt to the cooked banana and stir while pouring yogurt.
Add three fourth glass of water and mix well.
When it starts bubbling, switch off the flame.
Keep another pan and add 3 tablespoon coconut oil , when it starts heats up,add one teaspoon mustard seeds, and three fourth teaspoon fennel seeds.
Add 4 dry ed chili , a stick of curry leaves and stir well, transfer to the prepared dish.
Cover and keep for some time and serve with rice.
Tastes best wen keep for overnight and then serve.

Raw Banana- 4 Nos
Green Chili - 6 Nos
Red Chili Powder - One Tablespoon
Turmeric Powder - Half Tablespoon
Grated Coconut - 6 Tablespoon
Cumin Seeds - One Teaspoon
Yogurt- 400ml
Coconut Oil - 3 Tablespoon
Mustard Seeds- One Teaspoon
Fennel Seeds - Three Fourth Teaspoon
Curry Leaves - 2 Sticks
Water - Two And Half Cups
Salt - As Per Taste
