olan || Sadya Specal || Olan Curry With Cucumber ||Ep NO :68





Here's an yummy olan recipe which is a special dish in Kerala Sadya. The olan is usually prepared with Ash Gaurd, but here is the recipe with cucumber. The cucumber used in the recipe has been grown organically in our own farm. There is a secret ingredient also has added to the recipe which adds yummy taste to the recipe. It's a tasty dish can be given to kids as well as the elders. As it's less spicy, it's a choice for those with gastritis and gastric ulcer patients. The sweetness of the coconut milk as well as the goodness of fresh coconut oil gives an extraordinary taste.




Take one medium size cucumber , cut into 4 pieces , remove its seeds and outer skin.
Take a small piece of pumpkin , chop into pieces, remove its seeds and outer skin.
Wash cucumber and pumpkin under running water.
Chop cucumber into small pieces.
Cut pumpkin into medium size pieces.
Transfer the chopped cucumber and pumpkin into a pressure cooker.
Add 4 green chilies without slicing into it.
Add 2 big spoonful of soaked red cow peas to it.
Close cooker and cook for a whistle on medium flame.
No need to add water.
The water from the vegetables is enough to cook red cow peas too. 
Switch off the flame after a whistle.
Wait till the pressure goes off from the cooker.
Take 6 tablespoon grated coconut, add little water, grind on a mixi jar
Strain through a strainer and take first expresses thick coconut milk. 
Again to the same coconut , add water , grind , strain through strainer and take the second expressed thin coconut milk.
Open the pressure cooker when the pressure is completely released.
Transfer the cooked vegetables into an earthen pot .
Keep over the flame and reduce the water content in it.
When water from the vegetables reduces, add the thin second expressed coconut milk.
Cover and cook till coconut milk reduces the amount to half.
Then add the thick first expressed coconut milk.
Do not allow to boil.
When it heated up, switch off the flame.
Add one big spoonful of fresh coconut oil and keep 2 sticks of curry leaves.
Cover and keep for 10 minutes.
Serve with hot rice.



Ingredients
Cucumber - One Medium Size
Pumpkin- One piece
Red Cow Peas - One Fistful
Green Chilies - 4 Nos
Grated Coconut- 6 Tablespoon
Coconut Oil - One Big Spoonful
Salt - As Per Taste
Water - As Required
Curry Leaves - 2 Sticks
