It’s regarding grilled Kerala banana in traditional way.



Choose banana which is perfectly ripped for the recipe.

It should not be over ripped or under ripped.

But banana should start ripening is the perfect time to grill them. Moreover when we apply pressure it should press down slightly.

Select bananas which is small and thin.

Here taking 2 bananas for grilling.

The live coals from the big fire woods are perfect for grilling bananas.

Now we need good live coals in the firewood.

Keep the bananas in the live coal and cover them fully with coals.

Then cover the bananas and coal with ash.

Ash provides more heat which helps bananas to cook properly.

It takes around 30 to 45 minutes to cook perfectly.

And the time depends on the heat of the coal and the size and shape of the bananas.

Don’t keep bananas on the very hot coal as it may cause burning of the banana easily and will not cook properly.

So make sure the heat of the live coal is perfect for cooking banana.

When heat of the live coal is less, it takes more time to cook banana.

Always there should be fumes from the live coals that indicate adequate fire in it to cook bananas.

When its ready will get a sweet aroma of cooked bananas.

When you get the smell of the bananas take out them from live coal.

Immediately take out from the coal, otherwise it will burn.

Blow, wipe and remove the ash which is stick outside of the bananas.

Transfer to the plate and wait until it reduces its heat.

Don’t try to peel bananas when it’s too hot as it is difficult to peel perfectly.

When the heat drops down slightly, try to peel bananas with hands.

If its still hot, and can’t handle with hands, use a spoon and peel them.

It is not necessary to peel bananas fully, it can be peeled half and cut them into small pieces if needed.

Both bananas have been peeled fully, if any traces of ash left over on the banana can be wiped with a tissue paper.

There will be some area in the banana which is grilled and burned well which appears as brownish or black color.

Those areas adds extra taste to the banana.

If you get the perfect banana, grilling will give you special taste.

The taste is different than that of those with steamed ones.

It’s an ideal recipe for babies with one year old on wards.
