Here is the recipe of boiled elephant yam.



 For that take one medium size yam.

Always try to boil as soon as it taken out from the plant, so that it cooks well and give you better taste.

As days pass on, the yam won’t cook well.

This elephant yam is planted in the month of February ,that can be taken for cooking by the month of August.

During August and September the yam usually cooks well. So if you keep yam for 2 to 3 days after taken out from soil also will not affect the cooking time.

Always use a pointed knife to cut elephant yam.

This one is the red colored elephant yam.      

There are yams with white color too.

Those yams are very tasty and rare.

Inside of the yam should be smooth in texture than roughened or thread like structure.

Those with thread like nature is not grown fully and that will not cook properly.

Remove the area where it attach to the stem as it is very hard.

If not using the entire yam for boiling, that part can be covered and stored in the refrigerator.

If needed can remove its outer skin and cut into small pieces and can be stored in the refrigerator.

Remove the outer skin and cut into big pieces.

You won’t feel itching when you cut elephant yam.

But when hands are in contact with water while washing will get the itching.

Some will get allergic form in between the fingers.

That’s depends on the type of yam and skin sensitivity.

Those yam causes itching will cooks well.

And the itching goes when the water in the yam boils while cooking.

Which means the itching lasts only for few minutes.

For that people keep water for boiling first and then cut the yam.

So that the itching goes off easily.

Or else can show hands directly to the hotness of the flame of fire wood and thus the heat reduces its itching.

There will be two stems for the yam.

After the first one, second stem comes and that’s the time to take out the yam for boiling.

If the stem of the yam vanishes, those yams grown fully and used for seeds.

After cutting the yam into pieces, wash it under running water.

Then cut into medium size pieces.             

The area where the yam attaches to stem is very thick so it has to be removed.

Don’t cut yam into too thin and small pieces.

As it destroy its shape once it cooks well.

If the elephant yam is not fresh, it will be harder to cut into pieces.

Those yams which is harder to make small pieces will not cook perfectly.

That can be identified when we use knife to cut elephant yam into small pieces.

The knife will not get inside smoothly if the yam is harder and not fresh.

Wash once again under running water and transfer to a pressure cooker.

Pour water till the pieces immerse n the water.

Add powdered salt to the water.

Yam can be cooked without adding salt if needed.

And after cooking add salt water in it.

But adding salt and cooking gives you better taste than adding salt later.

Salt enters deeper to the yam and makes it easier.

Close the pressure cooker and cook on medium to high flame for one whistle.

Usually elephant yam is planted on January to February.

Then yam will be ready to take out by August – September month.

Elephant yam needs 6 months to grow after plantation.

Boiled yam gives its best taste during monsoon season.

Elephant yam will not be planted during March.

If not planted on January or February, due to the lack of rain then it is planted on the middle of April.

Those yam will be ready to take out from soil by the last of September to October.

Always check out the stem of yam.

When the second stem comes out, yam is ready to take out from the soil.

Elephant yam gives better profit from August to December month for the Farmers.

It takes little more time for the whistle to come out from the pressure cooker as t5there is more water in it.

When the first whistle comes out, reduce the flame and cook for 2 to 3 minutes.

And then put off the flame and wait until the pressure goes off completely.

Open the cooker when pressure goes off and check yam for cooking level.

If it cooked well, yam will be soft while touching.

If yam is boiled properly, then strain the water carefully.

Check salt level.

If its not adequate, sprinkle salt water.

But don’t add powdered salt hereafter.

Don’t select elephant yam which is too big in size. It won’t be tasty.

Choose medium size elephant yam which is between 3 kg to maximum 6 kg weight.

This yam is 3kg weight and costs Indian Rupees 90/- as on August 2020.

Usually after two rains, Elephant yams can be planted.

In the pit, put dry cow dung  as fertilizer , then keep the yam seed and cover with soil.

Over to soil, cover with dry leaves and fresh leaves of wild jack tree.

Leaves of Wild Jack tree ( Artocarpus Hirsutus, Family- Moraceae ) reduces heat effect to the yam seeds.

When the stem of the yam vanishes fully, take out the yam and use it for seeds.

One entire yam can be divided into four pieces and get 4 seeds from it.

Since its red elephant yam, it has got good color after boiling.                     

Grated coconut is the combination for this boiled yam.

After transfer the boiled yam to a bowl, sprinkle some grated coconut over to it.

Coconut prevents the irritation and itching of throat, if any, while consuming yam.

As coconut has a touch of oily effect which smoothens the throat from mild allergies.

Always prefer sweet and fresh coconut as a side dish.

For small babies, especially after one year, if you need to give boiled yam, extract thick coconut milk by adding some water, and use coconut milk as side dish than grated coconut.

Because grated coconut is difficult for them to swallow and may cause indigestion too.

Moreover if you feel salt in the yam is not adequate, then add some powdered salt in the grated coconut and mix gently.

Combine with yam and consume it.so that salt can be compensated.
