Traditional Chicken Curry/Kerala Style Chicken Curry/Traditional Kerala Chicken Curry/ Prepared in Fire Wood



Ingredients

Chicken - 2 kg
Big Onion - 4 Medium Size
Garlic - 2 Bulb
Small Onion - 14 Nos
Ginger - One big Piece
Tomato- 2 Medium Size
Green Chilies - 8 Nos
Curry leaves - One Bunch
Fennel seeds - One Teaspoon
Cumin Seeds - One pinch
Cinnamon - 4 Pieces
Cloves - 10 Nos
Cardamom - 10 Nos
Coconut Oil - 4 Tablespoon
Mustard Seeds - One Teaspoon
Fenugreek seeds - Half Teaspoon
Chili powder- 8 Table spoon
Coriander Powder - 4 Tablespoon
Meat Masala - 2 Table Spoon
Pepper powder- 2 Pinch
Water - One and half cup
Salt - As per taste



Method Of Preparation

Its a tasty Chicken curry which is best combination with chapathi,Rice and Tapiocca.

For that we need 4 medium size big onion which is sliced into very thin.
We need 2 bulb of garlic,14 small onion and a big piece of ginger.
Make small onion into small pieces, so that it will be easy while crushing.
We need 2 medium size tomatoes to enhance the flavor of the curry.
Slice both tomatoes lengthwise.
Take 8 green chilies,green chilies provides special taste to the chicken curry.
Collect a bunch of curry leaves for adding to the curry.
Prepare a masala by crushing 2 tablespoons of fennel seeds, a pinch of cumin seeds, 4 pieces of cinnamon,10 cloves and 10 cardamom.
Altogether just crush it and don't  make it fine powder.
This chicken curry is preparing in fire wood.
For that keep a vessel ,add 3 tablespoons of oil,once add one teaspoon mustard seeds and half teaspoon of fenugreek seeds.
When it splutters add chopped big onions.
Stir well until onions changes its color.
When onions turns golden color,add crushed small onions .
Cook until raw taste goes off.
Then add a fistful of fresh curry leaves.
Now add one tablespoon coconut oil again.
And add crushed ginger and garlic.
Add 8 green chilies along with it.
When its cooked properly add chopped tomatoes.
When tomatoes are cooked properly, add 8 tablespoon of chili powder, 4 table spoon of coriander powder,one and a half table spoon of turmeric powder,2 table spoon of meat masala,2 pinches of pepper powder along with prepared masala to the vessel,stir well.
Sprinkle water little by little and cook masala.
Add a fistful of fresh curry leaves and washed chicken pieces.
Its a 2kg chiken washed with vinegar and lemon juice.
Stir until masala cots to the chicken pieces.
Add one glass of water, and a fistful of curry leaves.
Cover up with a lid and cook chicken.
When chicken half cooks, add salt to taste.
Stir well and close with lid to cook chicken on a low flame.
Chicken is done when the meat separates from its bone.
Add a fistful of curry leaves and put off the flame.
Cover up the chicken with lid for 5 minutes and its ready to use.
Best combination with Rice,Appam,Chapathi and so on.
