Kozhukkatta or rice dumplings is an yummy recipe in which it is cooked in coconut milk.Its so easy to prepare and can be served as an ideal breakfast or else as an snack in the evening.The texture and the shape is attractive and most of the kids likes it.The best thing is that, it doesn't require any side dish as the delicious taste comes from the goodness of fresh thick coconut milk.There are lot of variations we can make Kozhukkatta and it is one among them.It is the recipe of my mother and she used to prepare frequently and hence its a nostalgic dish.Even my brother loves it and this dish is his all time favorite. After preparing this delicious Kozhukkatta mother used to serve in a small plate to my brother.When he was just 2 years old.And that's the age where children likes to pick food and try to eat by them self .He used to prick each rice dumplings with the help of coconut leaf stem ( Eerkil) and eat.This is a healthy food prepared with very few ingredients and gives good filling after having a small quantity.These Kozhukkatta is usually served in cups with spoons, as the Kozhukkatta or rice dumplings were floated in the thick coconut milk.Also you can serve it in banana leaf in a traditional way especially when it slightly cools off,since it has a tendency to thicken after cooling, it wont flow much.Tastes better when you serve it in fresh banana leaf.The taste of Kozhukkatta is palatable and all of you will enjoy each and every bite of this.Here with I have prepared paal kozhukkattai in an authentic and traditional way as I learned from my mother.Trust me,Its delicious and yummy.


Ingredients

Roasted rice flour - One cup
Thick coconut milk( First extract ) - Quarter teaspoon
Thin coconut milk ( Second extract ) - 2 Cups
Salt - As per taste
Water - Two and half cup


Method of preparation

Take half portion of a coconut and freshly grate it well
Add required water and prepare quarter glass thick coconut milk and two glasses of thin second extract coconut milk
Take one cup of roasted rice flour in a bowl
Add required salt and mix well to the flour
Add one cup of very hot boiled water and mix well
When you can handle with its heat, knead dough and make it smooth and soft
Make small rice dumplings from the prepared dough without any cracks
Even if you prepare rice dumplings and keep over other it wont stick each other 
Take one rice dumpling from the prepared dumplings and keep it aside
Keep a pan and add prepared second extracted thin coconut milk
Keep it on a medium flame and allow to boil
When its about to boil, add required salt to the coconut milk
When coconut milk boils, add prepared rice dumplings 
Cover and cook on a medium flame
Open in between and stir well to prevent sticking at the bottom
Check salt and add if required
For the better taste always use coconut milk from freshly grated coconut rather than frozen and powdered coconut milk
After 5 minutes check the rice dumplings for cooking level
If its soft it indicates its cooked well
Now it is in a loose consistency and if you like you can have us it is or if you needed to make it thick, take the preserved rice dumpling and add 2 to 3 teaspoon water and mix well without lumps
Pour the mix while stirring without making any lumps
Immediately it will thick, but cook for 2 minutes till raw taste goes off
The consistency will be even more thick once its cool
Then add the prepared first extract thick coconut milk after keeping on a very low flame and mix well
Don't allow to boil the thick coconut milk, stir continuously
Just heat it to avoid raw taste of coconut milk
When its adequately heated well, switch off the flame
Stir well even after flame is off to avoid boiling of thick coconut milk
Check salt, flavor and taste
Its better to serve when slightly hot and it even more thickens when its cool
You can have with some rice dumplings along with creamy coconut milk is an ideal style of eating 
Yummy rice dumplings is ready to serve
Its healthy breakfast, can be given to kids and those who suffer from ulcer in stomach
And those who are restricted to take to take food prepared with fermented food
Its a good filling even you take small portion
You can serve in banana leaf, if its a thick consistency or else in a glass with a spoon if its thin consistency.


It is a delicious rice dumplings with the richness of fresh and creamy coconut milk
