Chicken Fry || Fried Chicken In Kerala Style || Kozhi Varuthathu ||Kozhi Porichathu||Episode No : 35

Chicken fry is one of the popular dishes in Kerala. Chicken pieces are marinated with few Indian spices in advance and then deep fried in oil. Coconut oil is used for frying chicken which gives a special aromatic flavor.Even though adding spices to the chicken,it has very mild spice level since it is fried in oil.Chicken fry can be used as starters or can be served with rice, chappathi Appam (Coconut and rice pancake ) and Roti's. It is a delicious chicken recipe that's all time favorite for everyone including kids.This chicken fry has natural dark brown color since we have not added any color.Usually Restaurants adds red food color to give a good appealing color to the dish.Do frying in medium flame with frequent flipping of chicken pieces.This chicken fry is always my family's favorite and is most preferred dish during Christmas and Easter.The final touch with fried onion,ginger, garlic , green chilies and curry leaves adds an delicious taste.This is the exact recipe of my mother.I am sure you all will like this.




Ingredients

Chicken - 500 grams
Turmeric powder- Quarter teaspoon
Dry red chili powder - Two teaspoon
Kashmiri chili powder - Two and half teaspoon
Pepper powder- One teaspoon
Ginger garlic paste - Two teaspoon
Cardamom- 4 Nos
Cloves - 4 Nos
Cinnamon - 4 Nos
Star Anise - 1 Nos
Fennel seeds - One teaspoon
Curd - 2 teaspoon
Onion - 4 Nos
Ginger - One piece
Garlic - 20 Nos
Green chili - 10 Nos
Curry leaves - 2 sticks
Water - Quarter glass
Coconut oil - One cup
Salt - As per taste



Method of preparation

Take 500 grams of chicken, cut into small pieces, washed and drained well
Take quarter teaspoon turmeric powder, 2 teaspoon dry red chili powder, two and half teaspoon kashmiri chili powder,one teaspoon pepper powder , 2 teaspoon ginger garlic paste
Take 4 cardamom,4 cloves, a piece of cinnamon,one star anise and one teaspoon fennel seeds , grind and make powder
Add the spices to the mix
Add required salt and 2 teaspoon thick curd, mix well and form thick paste
Marinate chicken pieces and allow to rest for minimum half an hour
Take 4 onions of medium size, 20 pieces of garlic , a piece of ginger, 10 green chilies and 2 sticks of curry leaves
Chop onion and garlic lengthwise, cut ginger thinly, slit green chilies
Take quarter glass of water and add one and half teaspoon of stone salt and mix well until salt dissolves
Keep a pan and add coconut oil for deep frying chicken pieces
To the heated oil add marinate chicken pieces and fry well
Stir in between to cook chicken equally to all sides
When chicken cooks well,check salt
Add prepared salt water to the chicken, if it's required
When chicken fried well, transfer to a plate
Add remaining chicken pieces and fry well
Remove masala, if any, which is deposited at the bottom of the pan in between while chicken is frying
After frying all the chicken pieces , to the same oil in which chicken is fried,add chopped onion and required salt and fry till golden brown
When onion starts changes its color add one teaspoon ginger
When onion starts to fry add one teaspoon garlic, green chilies and some fresh curry leaves
Fry well and transfer to a plate
Fry remaining onion, ginger, garlic green chilies and curry leaves similarly and transfer to a plate.
Fried chicken pieces, masala powder ( which was deposited at the bottom of the pan while frying chicken ) , onion, ginger, green chilies and curry leaves are ready.
Now fried chicken and onions need to mix well.
Take a bowl, add one teaspoon masala powder
Above to that add some fried onion, ginger, garlic , green chilies and curry leaves
Over to this, keep the fried chicken pieces
Layer like this to the remaining fried chicken and onion.
Serve chicken fry along with fried onion, ginger,garlic , green chilies and curry leaves.


It's a special chicken fry which can be best served with Appam,Chappathi and rice.
