Uruli is one of the best known traditional cooking vessels in Kerala which is made of Bell metal or Brass.It has a polished inner surface with circular shape.It has a wide mouthed utensil which is suitable for slow cooking without much oil. Uruli also helps to retain the color and flavor of the ingredients. Now a days most of these traditional utensils have been replaced with aluminium, non stick and stainless steel products. Many believe that it is easy to handle and cook fast without the fear of sticking at the bottom even though not stirring  continuously.But these vessels are coated with certain metals like Nickel and chromium which has reaction with the food while cooking.Non stick pans has the coating of Teflon which is highly toxic and can cause cancer like diseases.Aluminium vessels reacts with food and form aluminium oxide whih can affect the bone density and ends up in arthritis. These type of ancient cooking vessels have the coating with Tin and thus it prevents any form of chemical reactions while cooking.

Health starts from kitchen and it comes from good food prepared with right form of cookwares.So choose your cookwares wisely , get a new vessel and enjoy food  prepared in it.



Ingredients Needed For Seasoning

Tamarind- One small lemon size
Ash-One small cup ( If Available )
Liquid Utensil Cleaner - Two drops
Water - 2 Cups
Turmeric Powder- Quarter Teaspoon



Method

Uruli is a traditional vessel used for cooking in Kerala from hundreds of years.It has a polished inner surface with circular shape,

It takes little more time to become hot.But once it is hot it maintains the heat for long duration.It is suitable for slow cooking without much oil and retains natural color and flavor of food.

But the traditional vessels are replaced by aluminium , stainless steel and non stick pans.Such vessels have Nickel and Chromium coating which is highly toxic.Where as this vessel has coating with Tin so that it does not have any reaction with food while cooking.

Uruli is made with clay, copper and Bronze.Bell metal also is using now a days.It is a hard alloy and another form of Bronze with high Tin content.It is 4:1 ratio copper and Tin that is 78 % Copper and 22%Tin.

Its available in different sizes.Big one is called "Varpu" used to cook food in large quantities.Where as small one is used for decoration.Even uses as "Kani" for "Vishu" ( "Vishu" is a festival of Kerala on the first day of Malayalam month ).

This Uruli has 10"( inches) or 26(cm) centimeters in size.The vessel is available as online also from amazon.I purchased this from a local shop at Kerala.Buying directly from local shops are much cheaper than getting from online .

The rate of uruli depends on its weight.This uruli has approximately 2 Kg weight and hence I paid Indian Rupees Rs 2575/-

Always buy heavy bottomed thick uruli for cooking.Its an expensive vessel,but its worth due to its health benefits.And can be used for long duration even generations without any damage .Some of them will just wash uruli under running water and then directly use it for cooking. But I always do a simple seasoning before cooking for the first time.

Use some tamarind and utensil cleaner liquid for washing. Traditionally uses tamarind and ash for cleaning. Don't use stainless steel scrubber for washing since it leaves scratches inside the pan.Always use soft scrubbers while washing the pan.Even you can use coconut husk for cleaning.Traditionally uses coconut husk along with a lemon size tamarind and ash.It gets a good golden color after washing with tamarind.

Add 2 cups of water along with a quarter teaspoon of turmeric powder and mix well.

Continue to boil for 10 minutes even after boiling.Then put off the flame and allow to cool.Some uruli's looks more golden as its polished well. That's the machine made one. More than that its good to use not much polished one for cooking.Once its cooled well , remove water and wash the vessel.
