Olan|Sadya Special|Kumbalanga Payar Olan|Ash Gourd/White/Winter Melon In Coconut Milk|Episode No:25

Olan is the simple recipe and an important part of Kerala sadya ( an elaborate spread of meal exclusively prepared and served during special occasions).The recipe is prepared with Ash gourd and fresh cow pea . It has a good flavor from raw coconut oil and delicious taste from the coconut milk and freshness of curry leaves and green chilies.Its a mild spicy dish.The healthy fresh cow pea adds more taste to this dish.Do try this recipe , which is an integral part of Kerala traditional sadya which is delicately prepared with winter melon/ white melon and fresh peas in a coconut milk base.

Ingredients

Ash gourd - 650 grams
Fresh cow peas - Half cup
Green chilies - 4 Nos
Thin coconut milk - One glass
Thick coconut milk - Half glass
Curry leaves - 3 sticks
Coconut milk - 2 teaspoon
Salt - As per taste

Method of preparation

Take 650 grams of ash gourd and cut into pieces
Take one half piece of ash gourd and cut into small pieces
Take the half portion and cut into small pieces
Remove its seeds and outer skin
Cut ash gourd  in rectangular shape
Wash and drain ash gour
Take some fresh cow pea
Remove the skin and take half glass of red cow pea
Wash and drain fresh red cow pea and take 3 green chilies
Slit green chilies
Take freshly grated coconut from half portion of a large coconut
And prepare one glass of thin coconut milk and half glass thick coconut milk by grinding with adding some water
Take 2 stick of fresh curry leaves too
Keep an earthen pot and add fresh red cow pea along with a glass of thin coconut milk
Add a stick of fresh curry leaves and a sliced green chili
Mix and cook on a medium flame
After 10 to 15 minutes of boiling , the red cow pea is cooked well
Now add chopped ash gourd and sliced green chilies along with required salt
Cover and cook on a medium flame
Don't add water or coconut milk since ash gourd cook by its water

Once ash gourd cooked well, gently smash few cow peas and some pieces of ash gourd with the spatula as it thickens the gravy and adds more taste to the dish
Now add the half glass of thick coconut milk and mix well
Don't allow to boil
Add a sliced green chili and a stick of fresh curry leaves and two teaspoons of raw coconut oil , mix well
Serve after 5 minutes

Its one of the traditional side dish in the Kerala sadya
