Beetroot Lassi | Sweet Lassi | Pink Beverage | Healthy Drink | Easy and Tasty Drink | Episode :23

Its a healthy beautiful pink beverage which is low in fat, full of minerals and vitamins and are packed with lots of antioxidants. Beetroot lassi is a yogurt based Indian drink which is added with cooked beetroots.It has a sweet traditional flavor. This is a refreshing and cooling drink especially during summer.

Ingredients

Beetroot - Half portion of a beetroot
Ginger - A small piece
Curd - Three fourth cup
Water - One cup
Sugar - 4 Teaspoon
Salt - One Pinch


Method of preparation 

Take a medium size fresh beetroot
Peel the skin of half beetroot
Cut the half portion of beetroot and chop into small cubes
While chopping itself check the taste of beetroot
Always select the beetroots which is sweet and don't use those which is of bitter taste
Select the beetroots which is of dark maroon color
Take a small piece of ginger, crush well, squeeze with hand and take juice from it
Take the  three fourth glass of thick curd without sour taste
Keep a pan and add one glass of water
Add chopped beetroot and cook on a medium flame until beetroots are soft
 Put off the flame and allow to cool
Separate cooked beetroot pieces from water
Grind beetroot by adding 2 to 3 teaspoon water to fine paste
Transfer the beetroot paste into a bowl along with the curd and ginger juice and mix well
Now add the remaining beetroot water and mix well
Add 4 teaspoon of sugar for the sweetness and mix well
Add a pinch of salt to balance sweetness of lassi
Now whip the curd gently to make it smooth texture
 Transfer the mix to a serving glass


Tasty sweet lassi is ready to serve
Beetroot has numerous health benefits like it controls Blood pressure, prevents stroke, improves immunity, aids in digestion and enhances skin glow.
Serve chilled for the better taste
But don't add ice cubes in it, as it alters its consistency.
