Jack Fruit Seed Stir Fry || Chakkakuru Thoran || Nadan Chakka kuru recipe || Episode No : 20

Jack fruit  seed stir fry/ chakka kuru thoran is an delicious Kerala traditional recipe. Jack fruits are very popular and abundantly available in Kerala . During the season of jack fruit , its seeds are prepared in various ways. It is rich in protein and fiber. This recipe has been given by my mother and it is a perfect side dish for hot rice, especially Kerala Matta rice..



Ingredients

Jack fruit seeds - 500 grams
Coconut ( Freshly grated)- One cup
Shallots - 40 to 50 pieces
Green chilies - 6 Nos
Garlic - 15 Nos
Curry leaves - 3 sticks
Water - Two and half cup
Coconut Oil - 2 teaspoon
Salt - As per taste



Method of preparation

Take some fresh jack fruit seed and remove its outer cover
To remove its brown layer easily soak the jack fruit seeds in a cup of water for 20 minutes
After 20 minutes remove the brown color part with a knife
Wash the jack fruit seeds and cut into small pieces
Take a cup of freshly grated coconut, 40 to 50 pieces shallots, 6 green chilies , 15 pieces of garlic and two stick of fresh curry leaves
Chop shallots and garlic lengthwise and slit green chilies
Chop a stick of curry leaves and add grated coconut to it
Take quarter glass of water and add to the coconut
Gently squeeze and allow some milk to come out of the coconut
Keep a pan and add chopped jack fruit seeds to it
Add chopped shallots, garlic , green chilies and a stick of fresh curry leaves
Add two cups of water along with required salt
Cover and cook jack fruit seeds
When it starts boiling , add prepared coconut and mix well
Cover and cook well, stir in between
Check jack fruit seeds are cooked well
Check salt and add if its required and mix well
Always take jack fruit seed while its little bit moist because it turn dry when its cool
Add 2 teaspoon coconut oil and a stick of fresh curry leaves
Just have a mix , cover with lid for 5 minutes and then serve hot


Its a best combination with hot rice, preferably Kerala matta rice.
