Chicken Perattu || Kozhi Perattu In Kerala Style || Chicken Roast|| Easy Recipe || Episode No :19

Chicken perattu is a traditional recipe of Kerala which is deliciously rich in flavor as well as a good appetizer. It is a simple tasty chicken recipe which has a good combination with rice, chapatti, appam ,idiappam and pathiri.This is a great dish to be served during special occasions especially during parties and get together.The real taste can be obtained by stirring the chicken pieces along with the masala with the perfect pot and exact flame.




Ingredients

Chicken - 250 grams
Dry red chili- 5 Nos
Dry Kashmiri red chili - 4 Nos
Cardamom - 4 Nos
Cloves - 6 Nos
Cinnamon - Small stick
Cumin Seeds Quarter teaspoon
Black Cumin / Kala Jeera - Quarter teaspoon
Turmeric Powder - Half teaspoon
Coriander Seeds - Half teaspoon
Pepper - Quarter teaspoon
Onion - 2 Nos
Shallots - 100 Grams
Garlic - 10 Pieces
Ginger - A small piece
Curry leaves- 3 sticks
Coconut Oil - 3 teaspoon
Water - Quarter cup
Salt - As per taste





Method of preparation

Take 250 grams of washed and drained chicken pieces
To prepare masala take 5 dry red chilies, 4 kashmiri chili , 4 cardamoms , 6 cloves,  a piece of cinnamon stick, quarter teaspoon of cumin seeds and black cumin seeds, half teaspoon turmeric powder , half teaspoon coriander seeds and quarter teaspoon pepper
Keep a pan to dry roast all the spices
To the heated pan add coriander seeds and whole pepper
Stir well and roast till the coriander seeds changes its colour on a very low flame
Add cardamoms, cloves and cinnamon stick and stir well
Once these releases its aroma add dry red chili and kashmiri red chili and mix well until it changes its colour
Then add cumin seeds along with black cumin seeds and roast well
Dont allow the spices to burn. Always control the flame
Finally add turmeric powder, mix well and switch off the flame
Then allow to cool and grind spices by adding water to make a fine paste
Allow the chicken pieces to rest for minimum half an hour to one hour in refrigerator
Take 2 onions and 100 grams of shallots ,10 garlic, one small piece ginger and 3 stick curry leaves
Chop onion lengthwise, cut shallots into 3 to 4 pieces , make garlic into two halves and cut ginger thinly length wise
Keep a pan , preferably earthen pot and add marinated chicken pieces to it
Then add chopped shallots , ginger, garlic along with 2 teaspoon organic vinegar and a stick of curry leaves
Add required salt and mix well
Add half glass of water , mix well , cover  and cook chicken pieces and put off the flame once the chicken is cooked well
Take another pan, add chopped onion , and required salt , a stick of curry leaves and stir well until golden brown colour
Now add the cooked chicken pieces
Dry roast the cooked chicken and make sure the shallots are roasting well like the onions
Check salt and add if required
When the shallots are roasted well and cooked over the chicken pieces , add one teaspoon raw coconut oil along with a stick of fresh curry leaf
Stir well and switch off the flame


Its as delicious chicken curry for rice, chapathi , appam , and pathiri
