Brinjal Stir Fry||Vazhutananga Mezhukupuratti||With out onion &With less ingredients||Recipe No :15

It's a very tasty dish since the vegetable is very tender and less seeds in it.Moreover it is easily available.If you have a kitchen garden at your courtyard ,it can be easily grown and make stir fry with fresh hand picked vegetable which gives an amazing taste.It is an quick recipe with few ingredients and best combination with hot rice (preferably Kerala matta rice ) and even chappathi/roti.

Ingredients
Long green brinjal - 250 gram
Green chilies - 8 Nos
Curry leaves - 2 sticks
Coconut oil - 2 and half teaspoon
Turmeric powder - Quarter teaspoon
Salt - As per taste




Method of preparation


Take 250 grams of washed and cleaned long green brinjal and cut itnto small pieces
Take 8 green chilies and chop it into small pieces
Take two sticks of curry leaves too
Keep a pan and add two teaspoon of coconut oil
To the heated oil add chopped brinjal pieces
Add quarter teaspoon turmeric powder and required salt
Add a stick of curry leaves and mix well
Close with lid and cook brinjal
When brinjal is half done add chopped green chilies
Mix well , again cover and cook brinjal until it turn soft
Check salt and add if required
Check brinjal , if its soft and cooked well , add  one stick of fresh curry leaves and half teaspoon raw coconut oil
Gently mix well and put off the flame

Best combination with hot rice and chapati
Its easy to prepare and can keep as a side dish in lunch box.
