Qatayef /Atayef is a Middle Eastern delicacy prepared during the holy month of Ramadan.These are small pancakes filled with Nuts and cheese.Usually it is fried to make more crunchy and dip it into the sugar syrup.The best season to prepare delicious Qatayef is 'Ramadan' .Make this classic traditional Nutty Qatayef with crunchy pancakes and filled with Nuts and sticky cheese,along with mildly fragrant sugar syrup.








Ingredients
Yeast-Half teaspoon
Sugar-Half cup
Water-2 cups
Wheat flour -One cup
Cardamoms-6 Nos
Cinnamon - 2 Small sticks
Rose White/Rose water-4 Drops
Salt-3 Pinch
Lemon-Half Lemon
Walnuts- 12 Nos
Pista-30 Nos
Cheese(Unsalted)-20 Small Cubes
Refined Oil -2 Cups



 Method of preparation

Take half teaspoon good quality dried yeast
Add 2 teaspoon sugar and quarter glass of lukewarm water
Mix and rest for 10 minutes in a warm place
Once the yeast is active add one cup of wheat flour
Add water and make a smooth batter, rest for an hour
Allow batter to ferment well
Take 4 cardamoms and cinnamon stick,add 3 teaspoon sugar and grind well
To the fermented batter add powdered mix and two drops of rose white/ rose water for flavour (optional)
Add a pinch of salt and mix well
In a pan add half cup of sugar and one cup of water
Add 2 crushed cardamoms and a stick of cinnamon
Make sugar syrup allowing sugar to dissolve in water
Add juice of half lemon to avoid sugar crystalization and some rose white/rose water if needed
(optional)
Add a pinch of salt,switch off the flame when its ready
Keep a pan and prepare pancakes from prepared batter
Take 12 walnuts and 30 pistas,crush it
Take some unsalted cheese and cut into 20 small cubes
At the middle of a pancake keep half teaspoon of crushed nuts and two small cheese cubes
Fold gently and seal the eges
Keep a pan and add refined oil for frying
To the heated oil put each one and fry till golden brown
Make it crispy and prepare each one in a similar way
Some of them dont fry deeply and take from oil without fry deeply
We can prepare it in two ways, one is deep fry in oil and make it more crispy, the other one is just put it in oil and take from it early without frying deeply,so that it will be very much soft outside
Make sugar syrup hot lightly,dip each deep fried qataef's in sugar syrup
Dip it for 5 minutes and switch off the flame
Dip qataef's in sugar syrup for 10 minutes
Transfer to a plate gently
Boil remaining sugar syrup till it thickens
When sugar syrup is little sticky, switch off the flame and transfer to a plate
The soft qatae'fs should be served by pouring the thick sugar syrup over to it
Instead of sugar syrup,honey also can be used
Qataef's are traditional snack of Middle Eastern countries
