മലബാറിലെ കിളികൂട്||Kilikood||Chicken Bird's Nest||Iftar Dish||Malabar style Kilikoodu||Recipe No :04

Kilikoodu is a popular snack of Malabar ( Northern part of Kerala, India ) and usually served during Iftar parties.The outer coating with vermicelli/ semiya, makes it crispy and crunchy and gives a look like kilikoodu or Bird's Nest.Its a non vegetarian recipe prepared with mashed potato and shredded chicken in a spicy Indian masala.



Ingredients

Potato-2 Nos
Water-One and half glass
Quail eggs - 6 Nos
Salt- One and half teaspoon
Boneless chicken- 6 pieces
Curd- One teaspoon
Turmeric powder- One teaspoon
Dry red chilli powder- One and half teaspoon
Pepper powder- Half teaspoon
Garam Masala-One teaspoon
Coconut oil- 2 cups
Onion- 2 Nos
Garlic- 6 Nos
Ginger -One small piece
Green chilies- 3Nos
Curry leaves-Few
Coriander leaves-One fistful
Kashmiri Chili powder-Half teaspoon
Coriander powder- Half teaspoon
Corn flour- 6Teaspoon
Milk -Half cup
Unroasted vermicelli/semiya- 250 Grams




Method of preparation

In a pressure cooker add 2 medium size potatoes ,add half glass of water and cook well for a whistle
Once pressure has fully released,check potatoes
Peel the potatoes and mash well
In a pan add one glass of water and boil 6 quail eggs
Add quarter teaspoon salt,cook quail eggs for 15 minutes
Take 6 pieces of boneless chicken
Marinate chicken pieces with one teaspoon curd,quarter teaspoon of turmeric powder ,one teaspoon of dry red chili powder,half teaspoon of pepper powder,half teaspoon home made garam masala ,quarter teaspoon salt and one teaspoon coconut oil
Marinate chicken and rest for 30 minutes in refrigerator , if possible, marinate and keep overnight in refrigerator
In a pan add 2 tablespoon of coconut oil
To the heated oil add chicken pieces and cook well
Shred chicken pieces
Take 2 onions,6 garlic, one small piece ginger, 3 green chilies,some fresh curry leaves and coriander leaves
Cut onion lengthwise,chop garlic,ginger and green chilies
Chop curry leaves and coriander leaves
To the quail eggs add quarter teaspoon turmeric powder,half teaspoon dry red chili powder,quarter teaspoon salt and half teaspoon coconut oil,mix well
To the pan add 2 teaspoon coconut oil
To the heated oil add chopped onion
Add quarter teaspoon salt,sort well
Add chopped garlic and ginger and mix well
Add quarter teaspoon of turmeric powder , half teaspoon kashmiri chili powder, half teaspoon coriander powder and half teaspoon home made garam masala
Mix and cook well till the raw smell goes off
Add shredded chicken pieces and stir well
Add chopped green chilies and mix well
Add mashed potatoes and mix well
Check salt and flavor of spices
Add chopped curry leaves and coriander leaves
Mix well and transfer to a plate
To the same pan add one teaspoon coconut oil
To the heated oil add quail eggs and roast well
Smash potato mix and make 6 balls
Take one ball and flatten it
Keep one quail egg in the middle and cover it
Similarly make all the balls
In a bowl add 6 teaspoons of cornflour
Add a pinch of turmeric powder and salt
Mix well with half glass of milk
Take unroasted vermicelli/semiya
Take one prepared ball, mix in cornflour and coat with vermicelli/semiya
Once again dip in cornflour and roll in vermicelli/semiya for getting more crispiness
Do the same with all prepared balls
In a pan add coconut oil for frying
To the heated oil add one prepared ball and fry well till it turn golden brown color
Once its ready transfer to a plate
Remove vermicelli/semiya from oil and then fry the next ball
Do the same and fry all other balls
Its a crispy and tasty snack
Its a good snack for Iftar , serve hot
