സ്വാദിഷ്ടമായ എണ്ണപത്തിരി|Enna pathiri|Poricha pathiri|Malabar rice pathiri| Iftar dish|Recipe No :03

Enna pathiri is a delicious and popular dish at Malabar (Northern part of Kerala,India).It is easy to make and can be taken for breakfast/dinner or as a snack with a hot cup of tea.It can be best served with chicken or mutton curry during breakfast/dinner.

Ingredients

Shallots-4Nos
Garlic -2Nos
Ginger-One small piece
Green chilies- 3Nos
Fresh grated coconut-5 tablespoons
Cumin seeds-Quarter teaspoon
Roasted rice flour -One cup
Water -One and half cup
Coconut oil- One and half cup
Salt-Half teaspoon





Method of preparation

Take 4 shallots,2 garlic,small piece of ginger ,3 green chilies and crush all together
Take 5 tablespoon grated coconut,quarter teaspoon cumin seeds and crush both together
Take one small onion,chop well into thin pieces

Take one cup of roasted rice flour
Keep a pan and add 2 tablespoon of coconut oil
To the heated oil add chopped onion and sort well
Add crushed shallots,garlic,ginger and green chilies
Sort till the raw smell goes off
For one cup rice flour and one and half cup water
Add half teaspoon salt and mix well
Once water boils,add rice flour and mix well
Add crushed coconut and cumin seeds along with one teaspoon black sesame seeds
Mix well, close the pan and rest dough for 3 minutes
After 3 minutes transfer dough to a plate
Knead the dough when its hot and make it smooth
Make your hands wet in water while kneading dough
Make smooth and soft dough
Flatten dough with hands and level it with a roller
Cut it with cookie cutter in round shape
You can prepare 10-13 pathiri's with one cup flour
Keep a pan and add coconut oil for frying
To the heated oil add prepared pathiri and fry well
Donot turn immediately since the pathiri's are very soft
When one side turn golden color flip other side
When its done transfer to a plate
Prepare all pathiri's similarly
For serving with chicken /mutton curry take pathiri from oil when its slight golden brown colour
Donot fry much since it turn more crispy
You can deep fry pathiri and these deep fried ones are good with hot tea
The light golden  brown colored pathiri's have crispy boarder and very soft middle part
Where as the dark brown colored pathiri's are very crispy

Prepare yummy pathiri's and have with chicken/mutton curry or serve with hot tea during Iftar parties.
