Amaranthus dubius , the red spinach is a plant species.It belongs to the economically important family Amaranthaceae.This species is valued as a leafy vegetable .It may be eaten raw or cooked in curry.Red spinach has high levels of vitamin C and E that may be beneficial for healthy skin.These are natural source of vitamins , minerals ,phytochemicals and essential anti oxidants that promote overall wellness.When eaten in moderation red spinach helps in reducing the risk of blood sugar , high blood sugar and cancer.

 Ingredients

Red Spinach - One Bunch
Coconut oil- Three tablespoon
Mustard seeds - Quarter teaspoon
Turmeric powder- Quarter teaspoon
Coconut - One fistful,Freshly grated
Green chilies- Two Nos
Salt - As per taste


Method of preparation
Take a bunch of red spinach , wash it, chop them well.
Into a pan add three tablespoon of coconut oil .
When coconut oil gets heat up, add quarter teaspoon of mustard seeds.
Once mustard seeds pop up, add chopped red spinach. 
Then add quarter teaspoon of turmeric powder, salt for taste and two chopped green chilies.
Then add a fistful of freshly grated coconut , stir well.
Cover and cook.
Open and stir in between for two to three times.
Cook on medium flame.
Once spinach cook well, switch off the flame.
Serve with hot rice or porridge.
