Bitter Melon / Bitter gourd / Momordica charantia belongs to gourd family.It may tastes bitter but has various health benefits.
Here is why we have to include bitter gourd in our diet.
It is a rich source of vitamins and minerals , as it contains iron , calcium, magnesium and potassium along with vitamins A and C.
Bitter gourd contains several anti oxidants and anti inflammatory compounds. 
It helps in lowering bad cholesterol levels which helps reduce the risk of cardiovascular diseases and cerebrovascular accident or stroke.
This is a vegetable which supports body's immune system and improves respiratory health of a person.
Bitter gourd is known for its anti diabetic properties that help to lower sugar levels of the body.
This is a vegetable which is low in calories, fat and carbohydrates which aid weight management.It also keeps feeling full for longer and helps one avoid over eating and hence it aid in weight loss.
This is an excellent source of dietary fiber ,helps in relieving constipation and indigestion.
As bitter gourd contains anti ageing properties it boosts skin health.
 
Method Of Preparation

Here's the recipe of tasty bitter gourd in coconut milk curry.
Take a medium size coconut and grill one half of it in an wooden fire until it turns light yellow.
Grate the other half of the coconut .
Make sure the coconut which is using for making the curry is sweet enough.
Add the grated coconut to a mixi jar , pour some water and extract three fourth glass of first milk and one glass second extracted milk.
The grilled coconut should be removed of  its dust and then chop into small pieces.
 Transfer to a mixi jar , add water and grind it a fine paste.
Take one bitter gourd, one onion and four green chilies.
Keep an earthen pot over the flame and add chopped bitter gourd , chilies and onion.
Add one teaspoon of red chili powder, half teaspoon coriander powder , quarter teaspoon of turmeric powder.
Now add the second extracted coconut milk , add salt , one stick curry leaves , mix well , cover and cook bitter gourd until soft.
Then add thick first extracted coconut milk  and grinded grilled coconut paste.
Stir well and bring to boil.
Then add vinegar for sour taste and bring to boil.
Once boiled well, switch off the flame.
Keep a pan again and add two tablespoon of coconut oil.
When it heats up, add half teaspoon mustard seeds.
One mustard seeds pop up, add four dry chilies and four stick fresh curry leaves.
Switch off the flame and transfer to the curry, cover and keep for half an hour.
Tastes best when served on the next day with hot rice.
 




 Ingredients

Coconut - One Nos
First Extracted Coconut Milk - Three Forth Cup
Second Extracted Coconut Milk - One Cup
Bitter Gourd - One Nos
Onion - One Nos
Green Chilies - Four Nos
Curry Leaves - One Fistful
Red Chili Powder -One Teaspoon
Coriander Powder- Half Teaspoon
Turmeric Powder- Quarter Teaspoon
Salt - For Taste

For Seasoning
Coconut Oil - Two Tablespoon
Mustard Seeds - Quarter Teaspoon
Dry Red Chili - Four Nos
Curry Leaves - Two Sticks
