Ladies Finger is a long finger like vegetable, which has a small tip and tapering end. It is also known as okra or bindhi.

It is good for eyes, for healthy skin, for the production of RBC's, improves immunity, aids weight loss, for managing glucose level in the body, relieves constipation and lowers cholesterol levels.

Take 250 grams ladies finger, wash and drain well.

Take one small ball of tamarind, add quarter glass of water, sort well.

To an earthen pot, chop ladies finger into pieces.

Add 3 sliced green chilies and fistful of sliced shallots.

Add one and half glass of water to cook well.

To another vessel, take 10 tablespoon of grated coconut , saute on low flame.

When coconut is golden brown colour, switch off the flame , add three fourth tablespoon of red chili powder half tablespoon of coriander powder, mix well, allow to cool.

Switch on the flame and cook ladies finger on high flame initially.

When it boils reduce the flame.

Add half tablespoon crystal salt, tamarind pulp, cover and cook well.

To a dry mixi, grind roasted coconut with out adding water.

Transfer to a plate and add quarter glass of water , mix well.

When ladies finger cooks well, add the mix to it.

Check salt and add if required.

Cover and cook for 3 minutes , till oil gets separated.

Serve with hot rice.

Tamarind - One Small Ball
Green chilies - 3Nos
Shallots - One Fistful
Grated Coconut - 10 Tablespoon
Red Chili Powder - Tree Fourth Tablespoon
Coriander Powder - Half Tablespoon
Water - One And Half Cup
Salt - As Per Taste
Curry Leaves - 2 Strips
