 Bitter Melon / Bitter gourd / Momordica charantia belongs to gourd family.It may tastes bitter but has various health benefits.

Here is why we have to include bitter gourd in our diet.
It is a rich source of vitamins and minerals , as it contains iron , calcium, magnesium and potassium along with vitamins A and C.
Bitter gourd contains several anti oxidants and anti inflammatory compounds. 
It helps in lowering bad cholesterol levels which helps reduce the risk of cardiovascular diseases and cerebrovascular accident or stroke.
This is a vegetable which supports body's immune system and improves respiratory health of a person.
Bitter gourd is known for its anti diabetic properties that help to lower sugar levels of the body.
This is a vegetable which is low in calories, fat and carbohydrates which aid weight management.It also keeps feeling full for longer and helps one avoid over eating and hence it aid in weight loss.
This is an excellent source of dietary fiber ,helps in relieving constipation and indigestion.
As bitter gourd contains anti ageing properties it boosts skin health.

Here's the recipe of Bitter Gourd stir fry which can be served with hot rice.



Take 4 tablespoons of freshly grated coconut , 25 Bird's eye chilies ,one stick fresh curry leaves, quarter teaspoon salt and crush altogether in a mixi jar.

Never add water while grinding and do not over grind the mix.

To the earthen pot , add chopped Bitter Gourd ,one chopped big onion , a piece of ginger, a teaspoon salt , mix well altogether.

Do not over mix the Bitter Gourd with spoon as the bitterness of the Bitter Gourd comes out.

Add crushed prepared mix to the Bitter Gourd , add 4 sticks of fresh curry leaves ,cover with lid and cook on high flame initially.

Do not add water while cooking.The water content from the Bitter Gourd and big onion is enough to cook it.

When the earthen pot gets hot, reduce the flame to medium and cook Bitter Gourd .

Open and check when steam comes out.

Flip the Bitter Gourd , so that the upper part goes down .

And the Bitter Gourd will not stick at the bottom of the earthen pot.

After 5 minutes, again open the lid and flip Bitter Gourd once again , cover and cook again.

After 5 minutes, check salt and cooking level of Bitter Gourd.

If it's cooked well, spread the Bitter Gourd in the pot and switch off the flame.

Do not cover when it's hot.

As the steam in the lid will not make the bitter gourd dry.

Finally add 2 sticks of fresh curry leaves.

Its the perfect dish for Diabetic patients.

They can reduce the amount of rice and add a portion of Bitter Gourd in their diet.

Bitter Gourd contain sugar biding protein Lectin which controls blood sugar and controls appetite.

Moreover Bitter Gourd has an Anti - Diabetic property , so that it can be considered those who have the family history of Diabetes Mellitus.

As there is no oil has been used, it's a choice for those trying weight loss too.

Ginger and Bird's eye chili's  used in the dish enhances weight loss.

Those who are in dieting reduce the amount of big onion, coconut and salt for the best results.

Serve with hot rice.

Ingredients

Bitter Gourd - One Nos

Big Onion - One Nos

Bird's Eye Chilies - 25 Nos

Freshly Grated Coconut - 4 Tablespoons

Curry leaves - One Fistful

Ginger - One Big Piece

Salt - As Per Taste
