Mutton Chops/Chaps is a popular dish across India.It's made by marinating mutton pieces with thick curd and Indian spices.You can have this with rice,chappathi,appam or anything you like.This juicy and tender mutton chops will give you an amazing experience in every bite you take.It is an easy and delicious recipe for you to enjoy.This dish is an great alternative when you want to eat or serve something really perfect with someone special.Prepare this mouth watery mutton chops and serve hot with anything of your choice.






Ingredients

Mutton-150 grams
Curd- One teaspoon
Garlic-15 Nos
Ginger - 2 Medium pieces
Green Chilies - 2 Nos
Curry Leaves -5 sticks
Coriander Leaves - 2 fistful
Turmeric Powder - Half teaspoon
Kashmiri Chili Powder - One teaspoon
Shallots - 25 Nos
Tomato - 1 Nos
Dry red chili - 3 Nos
Kashmiri red chili - 4 Nos
Coriander seeds (Whole) - Quarter teaspoon
White pepper ( Whole ) - Quarter teaspoon
Cardamom - 3 teaspoon
Cinnamon - One small stick
Mace - One petal
Popy seeds - Quarter teaspoon
Fennel Seeds - Half teaspoon
Cloves - 3 Nos
Star Anise - One Petal
Coconut Oil - 4 teaspoon
Water - Half Cup
Salt - As per taste



Method of preparation

Take washed and drained 150 grams of mutton pieces
Marinate with a teaspoon curd,5 garlic, a teaspoon chopped ginger, 2 sliced green chilies, one stick curry leaves, quarter teaspoon turmeric powder, one teaspoon kashmiri red chili powder and salt.
Allow to rest for an hour
In a pressure cooker add marinated mutton pieces and cook for 4 whistles
Take 3 dry red chili, 4 kashmiri red chili,quarter teaspoon whole coriander seeds,quarter teaspoon white pepper, 3 cardamoms, a cinnamon stick,one petal mace,quarter teaspoon poppy seeds, half teaspoon fennel seeds,3 cloves and a petal of star anise
Grind and make paste altogether
Take 25 shallots , a piece of ginger and 10 garlic , one tomato, 2 sticks of curry leaves and fistful of coriander leaves
Chop shallots, garlic, ginger and tomato
In a pan add 3 teaspoon of coconut oil 
To the heated oil add chopped shallots
Add salt and sort well
Add chopped ginger and garlic , stir well
Add chopped tomato and cook well
Add quarter teaspoon turmeric powder and prepared masala and cook till the raw smell goes
Then add cooked mutton pieces and stir well
Add fresh curry leaves and coriander leaves
Pour half cup of hot water and boil for 15 minutes
Check salt and its flavors , Add if required
Once gravy thickens, add fresh curry leaves, coriander leaves and a teaspoon of raw coconut oil
Switch off the flame and serve after 5 minutes
It is a delicious mutton chops, can be served with rice, idiappam , appam , chapatti or anything you like.
