Beetroot Thoran || Kerala Beetroot Pottiyal || Kerala Beetroot Stir Fry || Recipe No :11



It is a simple recipe with beetroot which is mixed together with coconut, onion and green chilies .This is briefly stirred on a pan over a very low fire flame. It can be served with hot rice ( preferably Kerala matta rice ) and is one of the common dish on the sadya menu.It has a sweeter taste and have an amazing flavor from coconut and coconut oil. Its a delicious , mouthwatering vegetarian recipe prepared in Kerala style .Do try and give us a feedback.


Ingredients

Beetroot – 2 Nos
Green chili – 6 Nos
Curry leaves- 2 Sticks
Shallots – 15 Nos
Coconut – 5 table spoon ( freshly grated )
Coconut oil – 4 teaspoon
Salt – As per taste



Method of preparation

Take 2 medium size fresh beetroot
Peel the beetroot using a peeler and wash well
Chop beetroot well
Take 6 green chilies and a stick of curry leaves
Chop green chilies and curry leaves
Take 15 shallots and 5 tablespoon of fresh coconut
Wash shallots and chop it
Keep a non stick pan and add chopped beetroot
Add chopped green chili and curry leaves
Add salt and mix well, cook over a very low flame
Keep a pan and add 3 teaspoon of coconut oil
To the heated oil add chopped shallots and stir well
Now add cooked beetroot and mix well
Add grated fresh coconut and stir well
Check salt and its flavors , add salt if required
Add a stick of fresh curry leaves and mix to it
Add half teaspoon raw coconut oil and put off the flame

Yummy beetroot stir fry is ready to serve
 Perfect with steamed rice ( preferably Kerala Matta rice )
