It is a famous authentic Malabar (Northern part of Kerala,India) dish rich with ripe bananas and eggs which is delicious and easy to prepare.It is made during Ramadan month and served during Iftar.Here is the perfect and easy recipe for you all.
Ingredients
Cardamom -6Nos
Sugar -5 teaspoon
Cashewnuts -One fistful
Raisins - One fistful
Banana -2 Nos (Ripped,Preferably Kerala Banana )
Ghee - 4 teaspoon
Egg -3 Nos
Salt -One pinch
Method of preparation
Take 6 cardamom and 3 teaspoon of sugar,grind and make powder form
Take a fistful of cashew nuts and raisins
Take 2 ripped Kerala banana and cut into small pieces
Keep a pan and add one teaspoon of ghee
Add chopped bananas to the heated ghee and mix well
Check sweetness of banana and add 2 teaspoon sugar
Stir well until sugar dissolves and put off the flame
Transfer prepared bananas to a plate
Keep a pan and add 2 teaspoon of ghee
Roast cashew nuts and raisins
Take 3 eggs and beat well
Add prepared banana to the egg
Add half of the roasted cashew nuts and raisins
Add powdered cardamom and a pinch of salt,mix well
Check sweetness of batter and add sugar if required
Keep a pan over a heavy bottomed tawa
Grease pan with one teaspoon of ghee
To the heated pan pour the prepared mix
Level it, close with lid and cook for 25 to 30 minutes
After 15 minutes garnish with roasted cashews and raisins, cover and cook on a very low flame
After 25 minutes its cooked well, check with toothpick
Flip over to the tawa and cook for 2 more minutes
Soft banana cake is ready, cut and serve when its cool
Prepare during Iftar and Send photos
